have you tried booting hexen "heimdalls xbox engineering disk" after you did it?

if that boots then you are softmodded you just seem to not have a dash other than ms dash..

id then go ahead and tell hexen to do a 1 click softmod install..
and you should be good to go..

can you confirm that you did not back up your saves to your xboxhdm disk. because if you transfered your udata  folder to E on xboxhdm.. thats the reason your saves keep coming back..
