Uh, well, you didn't describe enough of what you are doing but it sounds like either your playback can't keepup with the bitrate (hard to believe) or you are using too high a compression rate in making your AVIs.  I recommend, instead of making AVIs, you make MPEG2s and just burn them to DVDs.  Then you can play them back on your XBOX, or any DVD player.
