i think it depends on the game but yu can adjust the video in the console settings section.

You do have a widescreen(16x9) monitor right? i've never seen a widescreen 20' monitor.

Well, there are various things that can happen when playing on a 4:3 computer screen.

a) The game can work in a 4:3 resolution normally (the game adjusts the stuff it renders on screen to fit your screen)

The game can work in a letter-box resolution, (1280 * 720)
c) The game renders in 1280*720 but gets stretched across the screen to 1280*1024. Ive had Oblivion and PGR3 do this and trust me, it makes the game look quite worse than they really are (washes the picture out and stetheces everything along the Y axis, you dont want that).

So in short, if you got the setting setup correctly, then if a game displays in letterbox, you cant make it display in 4:3 (and you most probably wouldnt want to...).

So far the best I have got is to stretch the screen on the monitor. This makes the console look way too big but the games are better.
