I had tried to set-up my xbox on my gf's pc that way.  It's a media center PC so there are connections built in, but it had the delay you speak of.  I might be a software issue.  The Media Center software had the lag, but then I downloaded some trial video capture and edit software and found some had no lag.  However, many would not display in full screen or if it did, the quality was horrible.  Not sure how capture hardware works, but if it has to run through the PC's processor, it may have to lower resolution to keep up.  This is only speculation on my part though from what I observed from various video capture programs I tried.
