There is a lot of ways to hack the 360 to gain what it is you are looking for.
Question's on what tools and how to hack the xbox 360 will determine on whether you will buy a xbox360 phat or xbox 360 slim.
You can play original xbox on the xbox 360 (phat white) but I am not sure but I do believe you can play the original xbox on the slim as well.
As for video streaming I personally use tversity which is wireless streaming and allows me to set the stream bite and customize the setting to be quickly picked up by either my PS3 or my Xbox 360 slim through my wireless router.
