Any Linux distribution released in the past who-knows-how-many-years supports multithreading. Even prior to real multithreading support (for multiple threads within a program), Linux has always supported very nice mulitasking, so a crude form of threading was always possible using fork() to create new child processes.
The biggest challenge with Linux on the 360 would be the fact that almost the entire architecture is undocumented, as opposed to the original Xbox which was 90% identical to an nForce-based PC. While Linux supports many PowerPC variants, the 360's variant has no publically available documentation and the same goes for the video chipset.
