Thanks for the offer but I've already ordered a non-MS VGA which definitely does have a TOSLink socket via eBay.

Fingers crossed it is OK as some people have had problems with such cables. If that isn't satisfactory I think I'll probably accept my losses and buy a DVI-D to HDMI cable + XB360 audio dongle instead.

If you're comfortable with soldering and have an optical cable or port then it is reeeeallly easy to add it to the cable. All you have to do is take apart the cable, solder 3 wires to the pins on the video connector and voila.
