What sort of speakers do you want to run the sound through?  If you are just using the L/R RCA jacks that are built into the VGA cable, you are just going to get normal stereo sound.  This is what you would use if say, you were connecting your xbox to a HD-TV but didn't have a receiver or sound system and just wanted to use the TV's speakers.  The other option on the VGA cable (to my knowledge - as I'm using a VGA cable but not the MS designed one) is digital optical.

If you want to use your computer speakers that's not a problem!  However, you don't want to run sound information from the xbox, into your computer, and back out to your speakers.  Simply buy a female/female RCA to 3.5mm stereo mini plug adapter.  You would plug the RCA cables from the xbox into one side of this adapter, and the mini plug coming from your speakers into the other side.  The stereo information would then go directly from xbox to speakers.  Running sound through your computer will generally give you a bit of lag and can cause various problems (depending on computer load and such).  Generally, you just want to go straight through.

For normal stereo any RCA > a single mini should work fine...  I got one a while back at radio shack for like $2
