did you flick the switch to "HDTV" ? when you go to video setting in dash, what resolution does it say?

I'm using the VGA cable. The res is at 1280x768, i've also tried 1280x1024 in iwdescreen mode, they look the same. When hooked up to my PC monitor it was at it's native res of 1280x1024, and still didn't look as good as SDtv, this is why I suspect the fault is with the 360, not the TV.
