What kind of headphone jack? Male or Female? The male RCA audio to male headphone jack comes with the VGA cable, but if you need a male RCA to female headphone jacks then you can buy them seperately.

i don't see why you wouldn't be able to use headphones with volume control. as long as you can plug it in, you should be good.

Headphones with a volume control would work, but you would have to watch out for the levels. Headphone level and Line level (the level coming out of the 360 phono outputs) are different, so it could have problems with your headphones (distortion etc), depends on the model i guess.
