I've done this sort of thing before, all you need is a capture card and something to split the video cable (if you want to output to the TV at the same time). I did all my editing with Adobe Premier, but then again I had a student license, the real deal is pretty expensive.

but for that he just created lots of footage and saved them all as replays on the console, later he captured them all at once and did all the editing on the PC from there.
