You answered you're own question:

Component is 3 plugs for video
Composite is 1 plug for video
Stereo is 2 plugs for audio

3+1+2 = 6

Don't expect to convert it to DVI easily... I hope for your sake your TV has component inputs, or at least a VGA/RGB port. The conversion to digital DVI can often cost upwards of $200

Connectivity
Number of scarts :  2
Ext 1 Scart :  Audio L/R, CVBS in / out, RGB
Ext 2 Scart :  Audio L/R, CVBS in / out, S video in
Other connections :  Antenna IEC75, DVI-I, Common Interface
Front / Side connections :  Audio in, CVBS in, Headphone out, S video in
Audio output - digital :  AC3 over SPDIF (Optical)

which connection will ensure i get the best quality from the Xbox360

AFSTER,
DVI-I, easily the best... followed but SCART/RGB

DVI-I can be easily converted from VGA with an adapter, the 360 will support VGA. Also I don't know what "common interface" is.

As for audio optical S/PDif is your best bet.

If DVI-I can be converted from VGA and DVI is interchangable with HDMI... can you go from VGA to HDMI??  I'm not well versed in signal conversion.

no...

A DVI cable can carry both digital and analog signals...

VGA is pure analog video
HDMI is pure digital video

DVI can do both

DVI-I is a DVI socket that can only send/accept analog data
DVI-D is a DVI socket that can only send/accept digital data

so DVI-I is essentially VGA but with a different shaped plug

HDMI is essentially DVI-D in a different shaped plug that includes S/PDif audio

Converting from DVI-I to DVI-D (or visa-versa) requires about $200 worth of equipment an is essentially the same as converting VGA to HDMI (or visa-versa)

Make sense?  ;)

EDIT:
I should note that if something supports "DVI" it's generally assumed that it supports both analog and digital versions of DVI.

This is why a lot of PC video cards come with a little DVI/VGA gender changer. It's essentially dropping the digital signals all together and just transmitting the analog through VGA.

Actually, DVI-A is the Analog DVI, DVI-I has the pins for both. Most computers ship with DVI-I like twisted said. Most TVs only have DVI-D (or at least all the ones I've ever seen).

Conversions, in my experience, don't go well. If you have VGA on the TV, that would be the best connection to use at the moment.

As for including a digital connection, there's been some debate on these boards but it basically comes down to MS desiring a simpler connection that all HDTVs have. There are rumors of MS putting an HDMI connection on the 360 now or in the future.

Ah, thank Twisted.  I had forgotten that there were variations on DVI (-I, -D, etc.).  Thanks.

The easiest and cheapest solution is probably going to be VGA to VGA. Going to DVI-A doesn't change the quality at all and the DVI on most TVs is DVI-D and wouldn't accept a DVI-A signal.

If your HDTV has VGA, then yes it will. To be honest, it probably won't be much of a quality advantage over component but if that's the connection you want to use, then go for it.

I'd say go for components becase they give you basically the same quality as VGA. If you go for vga, then you gotta buy the 30$ adapter, which is useless in YOUR case because the Xbox360 comes with components.
