try deleting the downloads and re-downloading all 3

No need to redownload. Quite often, Halo 3 tells me I don't have the required maps when I really do. To fix this, just go to Custom Games and click on your map list. If the maps aren't there initially, a box should pop up saying that it's finding your saved content. After the box disappears, your maps should be there. If none of that happens, reboot your 360 and try again.
