Unfortunately, the 360 will not play an external sub file, nor an internal one.  You will need to hard code the subs if you want to see them.  AVi ReComp works fairly well for merging your sub files, but may take abit of time depending on the speed of your computer and the settings you use.

DivXMux or AviSub will take your external sub file and embed it into your video file to make it an internal subfile that is not hard coded, and it only takes a couple of minutes, but the 360 does not appear to support internal subs.
