I am currently doing the same exact thing as you.  I also would be interested in finding an answer.  The only thing I can think of is finding a av switch box and will down convert the signal to rf.  I tried one or two cheapo switches but no luck.   But I am sure with more investigation we could probably find one.  Also if you want to do the same thing with your xbox 1.  They sell an identical cable as the one that comes with the 360 but for regular xbox.  It's for sale on the walmart site.  and was about $15.  Made by Joytech.
