Ok so when I open the xboxdynamic.umd with my hex editor I can't find some certain strings.  For example, why can't I see the autoaim section thru hex editor but then I can see it if I open up the umd with notepad?  What do I use to edit this part with?  Can you just use notepad to edit those values?

You should be able to find autoaim with a normal search in xboxdynamic.umd.   Are you using a case-sensitive search?  Or, perhaps you are searching for unicode strings?

Do not use Notepad to edit your umd file. You will corrupt the file and the game will hang during loading.   Always use a hex editor and do not insert while typing or change the umd size in any way.

Yeah i just had some shitty hex editor that sucked.  For some reason it wouldn't even show values but just had the boxes like ◘◘◘◘ so then i got winhex and im all good to go
