If it matters I was taking the screenshots by using the menu from the right stick press.

You have to change the slot (1 - 8) the screenshot is saved to. Otherwise every shot will overwrite the last one.
General Options->Screenshot Slot (change it to "1" and take the title, then change it to "2" and take the in game, etc... all the way up to 8 different shots per game)
