would it really be too slow?
just out of curiosity how fast is the xbox's dvdrom compared to a crossover cable which is about 5000kb/s

A 16x DVD drive reads at 176 mbps (22MB per second).

Also, the whole ISO would pretty mumuch need to be cached on the HDD so it kind of ruins the point.

As it's in the Emu section, I'm guessing you've either posted in the wrong place or talking about hosting roms from a PC.

If you're talking about roms hosted from a PC it is in theory possible but no emulators out there use it yet (although the next version of xnes9x might)
