Title: Forgot To Backup My Eeprom.bin File!

So, why don't you install the stock hard drive, then take a backup of the eeprom, then use that to lock the new drive........?

So, reinstall your stock disk and MAKE a backup of your eeprom. You don't have to do it when you mod the Xbox, you can do it at any time. Evox and Config Magic will both do it for you.
