Chipped or soft mod?

If it is a softmod, I would remove the soft mod entirely, or use a fresh Xbox.

If chipped, I would restore to factory and let them see the soldering, but wouldn't remove the pin header.

If you haven't erased your gamesave in which you installed your softmod. simply boot your game (Mechassault, Splinter Cell or A.U.F.) and choose the "run linux" option. One of the dashboard options will give you the ability to remove the softmod. Then you can resoftmod it again for your demo.
