If I flash Bank 0 and Bank 1 with the same bios(ex.bank 0: x2 4981 512k. bank 1: x2 4981 512k) then desolder the switch on the chip.  Will it be possible to flash a 1mb bios like X3 or will it kill the chip.

It will frag without the switch in place

Lol, you sound like a customer I just had.  He used wire to bridge the switch so that both bank 0 and 1 were both on to use 1MB bios'.  Needless to say it didn't work and he ruined his chip in the process
