Definitely sounds like a soldering issue as it is happening when the temperature gets warmer.  Get a multimeter.  They are like $10

Sounds like you've got a non-1.6 BIOS flashed to the chip

V1.6 xboxes don't output temperature.  The numbers are meaningless in a 1.6.  Mine runs at a constant 1000+C which obviously is not the case.
