in the product description, it says that it comes pre-flashed with v2.27 cromwell bios so I'm pretty sure it's the 1.8 version chameleon.

I'm assuming you mean the $39 bundle.  The 1.8 Chameleon will work on the 1.4 and 1.5 xbox.  Check the following link if you have any questions about compatability.

I would think that the holiday bundle is one of the recent versions.  Most likely v1.4 or v1.5.  Don't know that v1.3 or earlier are still available at this point.

I'd imagine that if it didn't work, you'd just get an error screen when you tried to boot.  Then if you remove the chip, it would go back to normal.
