That is exactly what you need to change. Set it to 4:3 instead of 16:9. You'll get 4:3 with black panels on the sides.
At least, I think that's what it does...
And yes, there's plenty of 16:9 games. Don't remember all by heart. Just read around. You'll find some.

There's three options on that screen. 4:3/standard, widescreen, and something else.
Try all 3 and see which one best suits you. I'll give you a hint, you don't want to tell the XBOX you have a 4:3 screen when you actually have a 16:9 screen, so that eliminates one option. Try the other two and see what happens.
Also use the list of HD games in my sig. and make sure to try it with a game that supports widescreen natively. I don't know what will happen with a game that doesn't support widescreen when you are set to widescreen (should put up the bars, but I haven't tried).
