If you softmod, I would get the game save on there and back up the eeprom to the PC right now.
If you chip/TSOP, I would get it done and replace the HD.

1 on the GPU heatsink,
1 on the case,
You can fit a replacement V1.1 - 1.6 GPU heatsink which has larger cooling fins and no fan. you will need a clip for it too. I got one off a guy on ebay for about 7 UK pounds + pnp.
Get yourself some arctic silver coolant too - improves heat transfer to heatsinks.
Finally, for the ultimate in noise reduction, If you have a dremmel and are not afraid to use it , you can replace the case fan with one of the ultra low noise 80mm PC case fans (er...www.quietpc.com was it sold them ??) you need to trim the corners off the case fan and also the back of the DVD tray to make it fit - IIRC I ended up cable tying the top holes of mine onto the back case (it was easier).
Got mine running down to around 8dBa after a lot of mucking about - but it was the only way to attain the coveted CoWC (Certificate of Wife Compliance!) when she could no longer hear it , it was allowed in the living room ;-)
if you use xbmc (which is all mine is used for) you can further control the fan speed by gui settings

lol luckily I don not need to worry about that just yet.
So is it normal to sound like that? The noise doesn't bother me I was just worried it might have somthing wrong with it.
The fan is set to 20% currently.

That means the bearings on your hard drive are shot. It's definitely on it's way out. Mine (which is also a V 1.0) was making the same kind of noise, I replaced the drive and it solved the problem. You should also consider running the fan a little faster. Your new drive will most likely spin at 7200 RPM which will generate more heat than the stock 5400 RPM drive did.

How do I take the HD out? Do I have to take out the scews on top of the HD? What can I use to do that?

I would say 1 thing, my xbox resets randomly when Im at the evox menu, if i got into xbmc after that, it stays on as it should. but the evox area seems weird (just resets randomly). I wonder if the guy fitted my chip properly? (I do notice that the fan revs up much higher, to say 50% if xbmc fan-speed adjustment is anything to go by), and then when i run xbmc, it slows to 10% (as ive set in xbmc)
perhaps the reason for mine resetting, (and yours) if its the same problem... is the fan drawing too much power early on after a bootup? is that possible?
My xbox still makes a bit of noise really, im not sure which version i have yet. the hdd is quiet, the rear fan, isn't overly-loud, so maybe mines the gpu part... harder to tell by ear. I would replace the rear fan just for kicks but i dont fancy sawing ends off my dvd tray one bit. tying the fan to the case with cable-tie I can manage.

I replaced my hdd and the crap noise has gone.
You dont remove the screws on top of the hd, there are 4 screws (maybe 2, cant quite recall) that hold the hdd into the black plastic bay inside the xbox. these are on the left and right of the drive, you have to remove the black tray to get at them. Use a torx 10 or 20 (can't quite recall which) screw-bit to remove the screws.
After that, you're able to put into a replacement hdd, just connect the power and IDE cables back up the way they were on the old hdd.
And then, I would say, use the Slayers 2.7 (final) - CD image found online in various places, to load Evox onto the new hdd.
(this will start you with a clean hdd install, clean slate). So, if you value anything on your old hdd, make sure you ftp into your xbox and grab it off sharpish.
