the only thing it eliminates is you having to cut and strip the wires.
I've heard from people that have used it that it's actually HARDER to solder to than regular wire

Not true. It should be much easier. Soldering is the same. The hardest part is trying to line up the wire and the chip pins and make sure they don't move while you are sodering. The FlexPCB will eliminate this issue.
