Oh and also, I do not know what version the new xbox is so they may be different versions, will it be able to work in a totally differnet version?

The xbox dvd drives are interchangeable so you don't have to worry about any incompatibility issues.

Is it possible to also switch hard drives? Like if my XBox had a motherboard or PSU problem and I just wanted to get a whole new XBox - could I transfer my unhacked hard drive to the new XBox and have all my game saves?

Yes, you could install your hard drive in a new Xbox. To do so, you'd either have to unlock the hard drive and install a modchip in the new Xbox, or reflash your old Xbox's EEPROM to the new Xbox (if they are the same version).
If your Xbox had a power supply problem, though, you could simply replace it with a new one, without buying another Xbox.

To flash the EEPROM, I don't think you need to open anything, just run ConfigMagic off a softmod to back up and copy the eeprom to the other box.
If they are different versions, you likely have to unlock your old drive with its original key, and relock with the key on the new xBox, which you will acquire with a softmod or whatever.
If it is just savegames, you can back those up with a softmod anyway. if not a memory card.
