If your FTP transfer speeds are slow and variable and go about 50Kbps for long periods even on large files and using a known good LAN cable then check your XBOX hard drive before wasting days faffing about with network stuff.
Bad sectors will give this exact scenario. Try copying to another hard drive or USB stick.
Laptop hard drives are quiet, so listening for the scraping sound a hard drive with bad sectors makes isnt that easy unless you have your ear right over the drive.
