how do you edit profles where u can have unlimited ammo?

You can't. Besides, if you plan on using a hacked profile on Live to cheat(which you probably are), Bungie will permanently ban you. BTW, there never was an Inf. Ammo profile, it was simply a No Reload/Super Fast Reload that was demonstrated with Inf. Ammo from the Juggernaut multiplayer mode.
