Yes, it should be IDE ATA ideally but SATA is possible with a suitable adapter. Plenty of info here about that if you look for it.
You're right, you can't just install a 500GB HDD in exactly the same way as an 80GB. Anything larger than 137GB needs additional partitioning. I've not used Chimp2618 on anything larger than 120GB myself but if you read that mini-tutorial from kodec I pointed out to you he was using it for a 500GB HDD too.
You should still look at the pinned topics/tutorials at the top of this very forum. The one entitled something like "The Art Of HDD upgrading with a Softmodded Xbox" would likely prove helpful.

Not true. The point at which you need to use different tools is when any single partition is larger than 256GB. However, Chimp 2168 already supports large drives.
