Although you can connect pretty much any USB device to the console with such an adapter, the console still needs to know how to communicate with it.
"Generic" devices it understands are (some) mice, keyboards and USB drives. The only others are those designed especially for use with the X-Box - that is to say, the X-Box game controllers, light guns, and microphones/headsets.
If you want to use non-X-Box controllers, then you need to wire them up via this guide.
