I just flashed my 360 with ixtreme LT, and im curious about something. I do not plan to hook up my 360 to the internet to play online or do updates for a while....would i be ok playing games that are not stealth as long as i dont try to go online? if/when i ever decide to go online, i will of course make sure those iso's are. Basically im asking if these non-stealth games will leave something on my 360 that will get me banned when i ultimately hook it up to the internet

the theory is that the 360 reads, records, then transmits ALL of your game activities. that is the current/best theory so far.
if it's true, then playing anything other than something you ripped, and are sure includes all the right files, you will get flagged.

well, first off, you must make sure your games are stealth before playing them with LT.
Playing non-stealth games without being hooked up to online is somewhat ambiguous to explain.
I personally don't think you can get flagged. but it is still a risk.
