There are only a handful of games on both systems COMBINED that actually output in 1080p. The 360 will play (with the add-on) 1080p HD DVDs natively, and same with PS3 for BluRay.

In my experience, the 360 is actually MORE 1080p friendly than the PS3. Every game or video you run through it can be scaled to 1080p, component, VGA and HDMI all support it, so you have 3 different options. They both have about the same # of native 1080p games, which is very few.

the ps3 is the only one to support it at launch, due to it having hdmi, vs the 360's component (which can only output 1080i).

in the real world, you shouldnt notice a difference... as long as your tv is native 1080, you should have no issue displaying it. hell most cheap hdtvs drop it to 1080i anyway...

now that the 360 has hdmi, it can display 1080p, whether or not its actually interlaced still, i do not know... but the signal says 1080p.

Wrong. The 360 can output 1080p over component, if your TV/monitor allows it. Also, the PS3 doesn't even include HDMI cables or even component cables in the box (or at least didn't at launch), so the 360 is much more "1080p-friendly" simply by including the component video cable (and HDMI with the Elite). Also...the 360's Fall Update that allowed 1080p over COMPONENT and VGA was released 2 weeks before the PS3 launched.
