You cannot get ANY HDTV resolutions out of SCART, not even 480p i don't think.
You should be fine updating your xbox; go ahead and do it...10,000 to 1 odds nothing bad will happen, and besides that yours is under warranty for another year.
Depends what kind of files. You can copy music discs over to the 360's HDD, but i think that is it. As far as videos you can put them on another HDD, and then hook it up via usb to the 360 and view them that way. Or do the most logical, convenient thing and just stream from your pc.
