Title: Got A New System, Now I Need To Setup My Things.. :)

If your using your receiver for audio all the time then dont bother with plugging any audio into the TV, first of all it'll sound better without it, and secondly its unnecessary. If all your Xbox games work with back compat on the 360 then theres no need to plug that in either.

Right now, I don't have a DVD player, but if I want to buy one, will I need to plug it with another optical cable or I can plug it with an HDMI cable?

You actually already have two.  The old Xbox (either with a remote or modded) and the 360 right out of the box.
