You can send it 720p or 1080i but it will only ever display at 800x600... eseentially the resulting picture will only look a hair better then 480p.
It will look pretty good but you wont ever seeing things in real HD quality, even if your Xbox is set to HD resolutions.
It's pretty similar to the projector I use at home:

To get an idea of scale you can see the power Icon LED from the Xbox 360 on the bottom towards the right

Is there a big difference between a regular TV and an HDTV?
The fact that it's a projector doesn't change anything except that the picture is bigger.
