You can play with two people on one GT. One appears as the actual GT; the other is the guest.
It's a little convoluted how you have to do it.
1. Boot up Gears with two connected controllers. If a profile is signed in on the second controller, sign it out.
2. Sign in on the 1st controller with your XBL Gamertag.
3. Go to "Multiplayer" and then to "Xbox Live Player Match".
4. You should see text near the bottom saying "Y: Guest Sign In".
5. Hit Y on the second controller and pick the "Guest" Xbox Live Profile.
That's it.
