What is the biggest HD u can put in the xbox and does the rpm matter for example 5400rpm to 7200rpm.
The currently available BIOSes can address approximately 137GB of HD space. So, put in a 120GB, and you'll utilize it all - put in a 160GB, and you can use ~137GB. The RPM rating doesn't matter.

Seagates and WD's lock well. Maxtor's have been reported to work and not work, so it depends on the drive. I did hear of an 80g Maxtor that worked ok.

I actually have a 100 GB (5400 rpm) Maxtor in right now, and it hasn't given me any trouble.

Maxtors work fine. I used a 60 GIG and now I am using a 120 GIG. Where did you hear they didn't work well?
