I have the IDOTS UDE2 exploit installed. I've been reading about different BIOS updates, and noticed that in EVOX mine says BIOS UNKNOWN. Is this because I'm using a softmod and not a normal chip?

That also happens with chips and TSOPs... sometimes EvoX just doesn't pick it up in my experience.

And I'm correct by assuming that I don't need to worry about any BIOS's since I'm using a softmod?

The 'Unknown' just means the evox.ini doesn't have a "ROM" line corresponding to its (automatically derived) "Current" line. It's not a problem and can be easily altered (by getting the evox.ini from your Xbox, adding a "ROM" line to it accordingly [with whatever description you like] and then putting it back) eh. ;)
(Or, if you wish to remove it, comment out the 'BIOS' display line/s instead.)

Dont worry about it :) its a softmod "feature" :P
If you want to know what BIOS you have, just read the readme OR get it loaded into XBTool ;)
