No, you don't need multiple bios' for your project. A hardware switch and the IDE cable from the tutorial you posted will do. You only need two bios' if you want two environments.

Yes you can use a laptop DVD-Rom but they do not read original games and currently CANNOT be modified to do so. They will only read backup games.
