I haven't had any trouble with (almost) the entire Mame ROM archive on a single DVD-R along with MameX.
You should of course omit any roms greater than 54Megs in size since the Xbox cannot deal with them due to lack of RAM.
Since this is a limited set you'll only drop a very tiny percentage of all of them.
