OK, after reading the EvoX threads, I have a few NON-GAME (i.e. Utilities) ideas:
1. Game Save Data Tool (HD hosted)
Basically, a tool that can transparently grab game saves by game name and upload them to a PC for easy trading. Perhaps enhanced by using the Xbox's digital signing API to root out tough ones like the NCAA Basketball rosters and convert them into something generic to upload, then back into a signed version on download. This could run as a service in the Xbox with a client on the PC, or vice-versa. Preferable for the PC side to run as a service, as it can remain on all the time.... but harder to transfer across the web within the tool.
2. Hard Drive prep utility. (CD-RW hosted)
Dunno on this one. It really depends on how much access to the hard drive an XBE has. Basically, it would be a utility to read an unprepped drive and format it (zeros and partitions, as well as basic data) for use. Plug and play operation! Stick the driver in, load up the utility disc to format it.
3. Picture viewer (HD hosted)
Actually, this could be greatly expanded. I'd like to see an improved media player... with cool 3D effects, and this could be combined with an image viewer, too, with interesting transitions and such. Ideally, it would handle more than WMA - it would also handle MP3s, OGGs, and more.
4. VCD/SVCD/DiVX player (HD hosted)
No brainer here. Exactly what it says.
5. Cheat Code Machine (ala GameShark) with Code Training (HD Hosted, XBE Wrapper)

6. USB controller support (HD Hosted, XBE Wrapper)
Provide a means to use non-Xbox peripherals through the controller ports (which are 'enhanced' USB ports, after all). Keyboards would be pointless, except for homebrew apps.... but mice/trackballs and gaming controllers would be VERY usable through such a setup.

The note about "wrapping"
It's also been said that only one XBE runs at a given time. I haven't looked at the doco yet, but there has GOT to be some way to wrap executables, perhaps by copying them first to the hard drive, and merging them with a stub? Datel and Pelican will be doing something for their Xbox products, which are slated to be out soon.
