I never had any problems with the video, but I did have to disable the primary ATA Master (the xbox drive) to be able to access anything on it. Are you using onboard video? try just option 2 of the text only approach to see if that works, try plugging in another monitor  or if you're using a video card, try plugging your monitor in to the onboard video card?
