The way I did it makes it so you can still use your xbox to play games, runs Evox, so you should be able to play "backup copies" of games. I haven't written up any kind of detailed tutorial, but I have a "summary" tutorial.

I didn't figure any of this out on my own, but I did patch it together combining several different tutorials
The short, quick tutorial would go something like:
1-boot the 007:AUF evox installer hacked save game
2-intall evox
3-ftp up the bert&ernie fonts, rename the original fonts to *.xft
instead of *.xtf (important to step 5)
4-install GentooX on the F: drive, per "regular" gentoox install

5-Make a copy of the original xboxdash.xbe. Use a hex editor to search
for xtf (hex value 78 00 74 00 66) and replace it with xft. Got this

6-Use xbedump to sign your new, altered xboxdash.xbe, and name it
something different (as you know, you don't want to ever distroy your
original xboxdash.xbe) Also re-sign the gentooxx.xbe file with xbedump
and upload their respetive locations.
7-put options in your evox.ini file for booting your new, hacked
xboxdash, and also for booting Gentoox.
When you start the xbox, EvoX starts, you chose either "start hacked
xboxdash" or "Boot GentooX". The hacked MS Dash has all the
functionality (including Xbox Live). It loads the original fonts, just
with a different names "*.xft" instead of "*.xtf"
