Have you play or try any games on it yet? Erase all the games save and see if it work.

hmm was gonna suggest deleteing the cache files but if its not modded u can't maybe thats what it is tho cahce never got cleared properly

Have the xbox been open? Maybe, you need to clean the inside. It might have alots of dust in it. (just an idea) The xbox is old so it have no warranty right?

Update:
This morning I decided to replace the psu w/a known good one just for kicks.
Well, now it has been working for about 4 hours now with no freezes.
Apparently this was the problem.
