You said easier?  Then id say quicksolder, but if your going to possibly ever get another chip then id say definately the pin header.  In other words if your EVER gonna want that chip off the board then you want the header.  It is easy tho.  Just put flux all over (thin thin layer) the solder wick to empty your holes.  Pay careful attention to the resistors next to the holes.  Dont worry about the iron and let it sit on a lpc hole for a good two seconds till you see smoke and let the solder braid just suck it up.  Some WILL say a bulb is better, but I hate em.  Make sure and go back and put another touch of solder on the pins on the back of the mobo just to make sure youve got enough.  The solder should not look like little bb's or have any porous look to it.   Should be shiny and make a cone shape.

Your definatly right, the pin header method I would say is better because you could always switch later on if you'd like to test with a new chip.

Or you could always go for the solderless option which is a little more pricey but alot less work and less chance of you messing up your box.
