The version is irrelevant here.
Firstly you do not need to make any switch or remove the chip to go on XBL. If you install a DuoX 2 simply booting with the eject button means the chip is off.(closing the tray is far less grief than the other method you are proposing) It is perfectly safe to go on XBL like this. the chip will not be detected.
The problem you have is
 You mentioned "get back on XBL". If you have previously been on live with this box then your HDD and eeprom are a matched logged pair on live.
If you fit a new HDD and go back on live  you will be banned from live as it detects the mismatch between the new HDD and eeprom.
If you must fit a new drive you will also have to reflash the eeprom with an eepron file that has never been on live before.

Yes install the the chip an use Slayers's to  prepare the hard drive back to stock and install any extra software you want to the stock hard drive.
