Is the EEPROM of the matrix socketed or something? is it possible to upgrade its EEPROM to 1mb ?

I asked team Xodus this question and they said it is possible to upgrade the chip via the programming port on the Matrix.  I think they might be adding this feature as an upgrade in the near future (1Mb flash chip).  I don't know for sure if they are going to do this though.

Because of the design the Matrix uses, IT CANNOT BE MORE THAN 256KB!!!

This is because it uses the CheapMod design of connecting the LPC Flashrom directly to the LPC bus, and chip currenly being used is the ONLY one that will work, and even that is a fluke.

Guys that use the Cheapmod like myself call that fluke a " feature" LOL
