I've got the similar setup as you, PAL Xbox changed to NTSC via Enigmah but modchipped, and I can get widescreen.  Not sure what the cause of your problem is though.  Have you tried changing your video settings via XBMC or your other dashes and your positive that it was working how you wanted before in PAL?

You should just have your T.V on 16:9 anyways because the picture would be distorted and scretched, I think.  However that's how I have my T.V setup and it's fine.
