Ok, sorry for not explaining in full last time, I'll try to make it a bit clearer this time.
Looking at the picture and table of pin functions below it can be seen that pin 2 is Right Audio Out and pin 3 is Left Audio Out. These are the signals and always go to the centre conductors of the RCA sockets / plugs.
Pins 4 and 5 in this example are Audio Ground. All ground pins (audio, video etc.) are common so any can be used. The ground should always go to the outer conductors of the RCA sockets / plugs.
In the diagram by JaredC01 you were referring to in your first post the + is the centre conductor and - is the outer conductor. I assume JaredC01 tried to indicate this in his diagrams by the position of the connections, with the + in the middle of the connector and - at the outer edge of the connector.
Anyway, I hope that helps explain the RCA wiring.

On to the switches and other issues....
If I understand what you are intending to do correctly, you are going to mount a SCART socket and RCA audio sockets on your Xbox. Also you don't intend to use S-Video or Digital Audio outputs.
The audio output of the Xbox is only designed to be connected to one device at any one time. Due to this you might need to add a switch to select between audio out on the RCA and SCART sockets.
Line level audio out is available in all video output modes so you will not need to change to a particular mode to enable your RCA audio outputs.
To enable SCART output you will need to connect all three mode pins to ground.
Below is a possible solution to what I understand you are wanting.

By shorting out all three mode pins you will enable the SCART video mode. This gives RGB and Composite video output with Function Switching (enables the Xbox to tell the TV to change channel/input to the Xbox and tells the TV if the picture is widescreen or not).
Using this mode also allows you to still use your standard Xbox AV cable (as it only uses Composite video and stereo audio). However, if you plan to use any other type of Xbox AV cable, for instance an Advanced one with S-Video or a HD Component Video cable, you should use switches in place of the wire links on the mode pins. This will allow you to turn off SCART mode and enable mode selection by the connected Xbox AV cable.
